Greetings! I'm Elizabeth Casparro, an advocate for holistic well-being and a Registered Dietitian with over 15 years of experience. Beyond the credentials and professional milestones, I'm a mother of two boys, a dark chocolate enthusiast, a dedicated runner, and someone who finds joy in the art of baking. My belief in a balanced and enjoyable approach to nutrition extends from my personal life to my professional endeavors.

My journey in nutrition began as a high school athlete when my meal plan was reviewed by a recent Cal Poly nutrition graduate. From there, I decided to attend California Polytechnic State University in San Luis Obispo where I also minored in Spanish. Building on this foundation, I pursued a Master's degree in Public Health with a concentration in Community Health at San Jose State University.

My career has been a dynamic exploration of diverse roles. I began as a Bilingual Nutritionist at a community clinic and then Public Health Nutritionist at the Santa Barbara County WIC Program. While my time as a Clinical Dietitian at Arroyo Grande Community Hospital and Part-Time Adjunct Faculty at Foothill College taught me a lot, I desired to go back to community education. My tenure at Kaiser Permanente allowed me to expand my reach by facilitating seminars in-person and virtual, conducting health screenings, and guiding participants toward positive lifestyle changes.

In my present roles at Nutrition in Action and the Yellow House Project, I enjoy counseling diverse adult and pediatric clients. My approach to nutrition is rooted in the belief that all foods can be part of a healthy lifestyle when enjoyed in moderation. I love finding ways to increase "power" foods and moderate "treat" foods. In my view, a healthy lifestyle is a personalized journey that goes beyond the plate.
